Judith's Apple Crumble

Ingredients:

  • Filling:
    • 4-5 large cooking apples
    • 1 tsp cinnamon
    • 2 oz sugar
  • Pastry:
    • 4 oz flour
    • 4 oz muesli
    • 5 oz sugar
    • 1 tsp baking powder
    • 3 oz butter

Peel and core the apples. Roughly chop them and toss into a pot with the cinnamon, sugar and 2 tbsp of water. Keep them over a medium heat until soft (15-20 mins). 

Pre-heat your oven to 180C. Gather the dry ingredients for your pastry (flour, muesli, sugar, baking powder) and throw them all together in a mixing bowl. Give them a good mix.

Chop your butter into small cubes and throw them into your dry mix. Next, rub the butter into the mix using the tips of your fingers. Keep going until you're left with a crumble.

Take your pie dish, deep plate or whatever you're using to bake your pie. Pour the stewed apple into the dish, no need to grease it. Sprinkle the crumble over the apple and pop it in the pre-heated oven for 40 mins.

Serve with vanilla ice-cream and a little extra sprinkle of cinnamon.
